Tomato Phyllo Pie

1/4 cup butter, melted
2 garlic cloves, crushed
8 phyllo sheets(I found them in the freezer section by the Rhodes Rolls)
1 cup shredded mozzarella
3 medium red and orange tomatoes, sliced (I used about 4 Roma)
4 ounces crumbled feta cheese(I used the basil and sun-dried tomato flavor for some extra flavor)
1/3 cup chopped fresh basil

1. Lightly grease a large baking sheet. Preheat oven to 375F.2. Combine butter and garlic. Place 1 phyllo sheet on pan. Brush with butter mixture. Repeat with remaining phyllo sheets and butter mixture.3. Sprinkle phyllo with mozzarella to within 2 1/2 inches of the edges, top with sliced tomatoes. Sprinkle with feta cheese adn basil. Roll phyllo edges to form rim. Bake 20 to 25 minutes, until phyllo is crisp and cheese is melted. Serves 6.

Apple Salsa w/Cinnamon Chips

The recipes on this blog all look so good--I am intimidated. Thanks for putting this together Tiffany!
If you've been to a Pampered Chef party in the last couple of years you've probably had this. It's a good one for a party appetizer or for a semi-healthy sweet treat for little ones. Every time I've made it people rave about it.
Apple Salsa with Cinnamon Chips

1 medium granny smith apple
1 medium red delicious apple
1 tsp. lemon zest
1 tsp. lemon juice
1/2 C sweetened dried cranberries
1/4 C store-bought caramel ice cream topping (like Smuckers)
1/4 tsp. cinnamon
dash kosher salt

Finely dice apples, leaving skins on. Place apples in a medium bowl and add remaining ingredients. Mix well. Serve with Sweet and Crispy Tortilla Chips.

Sweet and Crispy Tortilla Chips
8 (7 in.) flour tortillas
Cinnamon and sugar, mixed.

Preheat oven to 400 degrees. Lightly spray tortillas with water; sprinkle with cinnamon and sugar. Cut each tortilla into eight wedges using pizza cutter. Arrange in a single layer on a baking sheet. Bake 8-10 minutes or until edges are light browned and crisp. Remove from pan and cool completely. Repeat with remaining tortillas.
